Kim Carrillo is an East Texan native. She grew up in Henderson and after having moved to other parts of Texas, decided to settle back in among the pine trees. She has a master’s degree from The University of Texas at Austin and bachelor’s degree from Stephen F. Austin State University. Both degrees are in Social Work and she has worked in non-profits and higher education. While encouraging people to obtain career skills and education to have a life they enjoy, Kim has also uncovered her passion for cooking food that people enjoy. After several years of working in international education & student recruitment, Kim made a jump to opening her own small business, Texas Tortilla Kitchen. Having worked with many different cultures from around the world while working in education, the conversations surrounding foods were always some of the most exciting for her. Some of these conversations inspired several of her menu items & recipes. Kim had always thought of having or leading a non-profit organization but never really imagined owning a business. Texas Tortilla Kitchen started in December 2019 but was put on pause when the COVID pandemic began in early 2020. From August 2020 until August 2021, the business was part time and now in 2022, Kim will have been working full time in her business for a year. While starting a business during COVID definitely had its challenges, Kim was fortunate that Texas Tortilla Kitchen was only a part time business during that time. While Texas Tortilla Kitchen is located in Arp, the business serves individual customers throughout East Texas and supplies a couple of local Tyler businesses with food items.
